Mushroom Coffee Penne Alfredo
This pasta dish will just astound you with its amazing flavors that will linger in your mouth and keep you begging for more!
Yields: Makes 4 Servings
Ingredients:
½ pound Penne pasta
To make the pasta sauce:
4 tbsps. butter, divided
1 (8 oz.) can sliced Portobello mushrooms
½ tsp. Cumin
2 tsps. Garlic, minced
½ pound Italian sausage, cut diagonally
1 cup Heavy cream
½ cup grated Parmesan cheese
2/3 cups Brewed coffee
Method of Preparation:
- Cook the pasta according to the packaging. Reserve 1 ladle of the pasta water.
To make the pasta sauce:
- In a pan over low heat, throw in the Italian sausage and allow it to brown on each side. Add the 2 tbsps. of butter and mushrooms and cook them until they are tender.
- In the same pan, throw in the cumin, garlic and remaining butter, heavy cream and coffee. Bring the heat to medium and bring the sauce to a simmer cook for at least 4 minutes and immediately remove it from the heat, Set the sauce aside.
To complete the dish:
- Pour the pasta in the sauce pan and stir the pasta in until they are well combined. Throw in the parmesan cheese and mix well. Serve and enjoy!
